Cinnamon Rolls
A Sourdough Take on the Swedish Kanelbulle
No PreservativesThe Story
Cinnamon has captivated the world for thousands of years. Native to Sri Lanka, it traveled west along ancient spice routes and became one of the most prized spices in Europe, treasured for its fragrance and worth a small fortune long before it found its way into everyday kitchens. For much of history, a pastry centered around cinnamon would have been an extraordinary luxury.
The modern cinnamon roll took shape in Sweden during the early twentieth century. As shortages following World War I eased and ingredients like flour, butter, sugar, and spices became more accessible, home bakers began rolling soft, cardamom-scented dough around a buttery cinnamon filling. The kanelbulle soon became a beloved part of fikaβSwedenβs cherished tradition of slowing down to share coffee and conversation. Its place in Swedish culture is so enduring that October 4 is celebrated each year as Kanelbullens dag, the Day of the Cinnamon Bun.
Scandinavian immigrants carried this tradition to North America, where the rolls gradually became larger, softer, and sweeter, often replacing aromatic cardamom with rich vanilla icing. What began as a simple companion to coffee evolved into one of the worldβs favorite comfort pastries.
At Levain Craft
Our cinnamon rolls honor both traditions. We begin with a naturally leavened, slow-fermented enriched dough that develops deep flavor and a delicate tang, balancing the richness of butter, brown sugar, and cinnamon without overwhelming sweetness. Each pair is baked fresh on the morning of your workplace bakery drop, delivering warm, handcrafted comfort inspired by generations of bakers who believed the best things are always worth waiting for.
