Pain de campagne—literally “country bread”—was the everyday bread of rural France for centuries. Before home ovens became common, many villages baked together in communal wood-fired ovens, where families often prepared enormous round loaves called miches, sometimes weighing several kilograms and intended to feed a household for a week or more. Each loaf was scored or marked with a family’s unique symbol so it could be identified after the communal bake.
The flour itself reflected the way people milled grain. Before modern roller mills, stone-ground flour naturally retained more of the wheat berry, producing a flavorful “grey” flour that fell somewhere between today’s white and whole-wheat flour. Naturally leavened with sourdough and given a long, slow fermentation, these loaves developed a subtle tang, a rich aroma, and exceptional keeping quality. Their thick, burnished crust helped protect a moist, tender crumb that remained enjoyable for days.
By the mid-twentieth century, industrial baking and the growing popularity of the light, airy baguette had pushed many traditional country loaves into decline. In the 1970s, a new generation of artisan bakers helped revive these time-honored methods, with Lionel Poilâne becoming one of the movement’s most influential ambassadors. Building on the bakery founded by his father, Pierre Poilâne, his celebrated wood-fired miche introduced countless people around the world to traditional French country bread and helped inspire today’s artisan bread renaissance.

- Unbleached, unbromated bread flour (wheat)
- Whole wheat flour (wheat)
- Water
- Sea salt
- Natural sourdough starter (fermented wheat flour and water)

Food Safety & Handling
- Baked fresh in small batches
- Allow bread to cool completely before slicing
- Store at room temperature in a paper bag or bread box for up to 2 days
- For longer storage, slice and freeze in an airtight bag
- Reheat or toast fully before consumption if frozen
Do not consume if mold or off-odors are present.
