Bread first arrived in Japan in the 1540s with Portuguese traders and missionaries, and the Japanese word pan comes directly from the Portuguese pão. For centuries it remained a niche food in a culture centered on rice. During the Meiji era in the late nineteenth century, however, Japan embraced many Western influences, and bakers began adapting European-style breads to suit Japanese tastes—lighter, softer, and more delicately flavored. Over time, these innovations laid the foundation for what would become modern shokupan, or “eating bread.”
Shokupan became a household staple in the years following World War II, when school lunch programs introduced generations of children to sliced bread. Today it remains at the heart of Japanese baking culture, appearing on breakfast tables across the country and in the beloved sando—the neatly trimmed sandwiches filled with everything from egg salad to strawberries and cream that have become icons of Japan’s cafés and convenience stores.
Its signature quality is texture. Traditionally baked in a lidded Pullman pan for its perfectly square shape—or without the lid to create the gently rounded yama (“mountain”) style—shokupan is enriched with milk and butter to produce an exceptionally fine, moist, and springy crumb. Many bakers also incorporate a cooked-flour method such as yudane or tangzhong, which helps the bread retain its remarkable softness for days.

- Unbleached, unbromated bread flour (wheat)
- Whole milk (dairy)
- Butter (dairy)
- Cane sugar
- Sea salt
- Natural sourdough starter (fermented wheat flour and water)

This product is not gluten-free.
Food Safety & Handling
- Baked fresh in small batches
- Allow bread to cool completely before slicing
- Store at room temperature in an airtight bag for up to 3 days
- For longer storage, slice and freeze in an airtight bag
- Reheat or toast fully before consumption if frozen
Do not consume if mold or off-odors are present.
